Carp Baked with Horseradish

Remove eyes and gills from whole cleaned carp. Salt inside and out,
sprinkle with 1 Tablespoon vinegar and spread 1 Tablespoon freshly grated horseradish root
or prepared horseradish inside cavity.
Place fish in a well-buttered baking dish, brush
with butter and bake in 350 degree Fahrenheit oven about 45-50 minutes basting frequently
with butter and a total of 2-3 Tablespoons of water.
When fish is fully cooked, fork-blend
1/2 cup sour cream with 3-4 Tablespoons freshly grated horseradish or prepared
horseradish. Season to taste with salt and sugar and pour over fish. Bake for another 10
minutes or so.
Before serving, garnish with chopped parsley or a combination of chopped
parsley, dill and chives. Serve with boiled potatoes.
